Madeleines et Cake aux fruits!


Madeleine is my favor, especially with lemon-poppy seed ! it seem simple a little cake but to make a ribbed indentation with the classic shell shape is not that easy, so many students in my class failed. 

Another one kind, I made today is fruit cake which I think many people love it more than a rich frosting cake. Inside pack with the fruits and favor of roasted almond was great favor. Of course the fun part is decoration, I wish we have more time and more stuffs to decorate tonight , it would be great if I can put some green color to contrast my cake.

Saint-Honoré






After my couples French dessert I made, I start to like baking more and more;) today my dessert is very good and fun to make. A lot fo preocess to finish saint-honoré - the light of sweet pastry dough, a cute decorated choux dipped with the caramel and chantilly cream( I love not too sweet and very smoot) filling or the dough and on the side.

Tarte au pommes!



I was looking forward to make this tarte after I fall in love with it for my firs time visit Paris! The thin crust ,not using too much butter and sugar but sweet enough as you can see from my tower apples in this picture.  I used about fives apples and It took me three hours to do all of this but it was worth, so much fun !!! Thanks chef  for coaching us, it was not easy because there are 14 students in my group and each of us made everything by ourself, especial just right after the demonstration. 




Difference kind of shortbread!



These are the sample of difference kind of shortbread we made in the class and from the demonstration. They are not too sweet and easy to make so all great for eating with the tea and coffee.

For example, one that I have with me on the photo is call diamonds or " diamants" in french which we add the favor of orange zest, other name are sablés nantais, lunettes,sablés au chocolat and  galettes bretonnes.

Le Cordon Blue à Paris!

For my first day at Le cordon blue, you probably see what I got- uniform, all the tool I need for my entire program and the school tour. 

I decide to come to study  pâtisserie  from  simple reason that I love and addicted to dessert which you might not be able to imagination that how many dessert I need and I can eat each day. If I want to study pastry, of course everybody know where to go- Paris ! 

The school has very well system and professional, I am looking forward to put my hand on baking my first dessert tomorrow.
