It was a delicious dinner with pumpkin curry and serve with rice. To make a curry is never difficult for me and I always tell everyone that curry is the most delicious and simple dish to start with . Many people will like to make a paste from scratch but don't worry even we are Thai - I can sure you 90% of Thai people never make paste at home but still make the best curry . I love pumpkin curry as personally love pumpkin and today I use kabocha which is the closet to Thai pumpkin . The sweetness and texture of it even make the curry rich and flavorful .
